I purchased this book for more security related SELinux settings and configuration, it also has extremely helpful commands and security related sections.
Leaving SELinux ON is the best for RHEL/CentOS distro's, it is a best practice and forces you to keep the system in an orderly fashion.
Also, when installing packages it is best to use the channel than compiling, due to the security risk imposed by installing gcc compilers and the like.
When you build systems 'by the book' you can run yum update and not have the fear of the box breaking. Maintaining a server with custom compiled packages, always leads to a quagmire and a management nightmare. You cannot update easily a compiled package, and you own it from that point on out.
